INGREDIENTS
Main
- 4 slices bacon
- 🧅 2 onions (300g)
- 🧈 30g salted butter
- 💧 200cc water
- 🧂 1/4 tsp salt
- 1/4 tsp consomme
- 🥛 200cc milk
- 50cc heavy cream
Garnish
- A dash of olive oil
- 🌿 A dash of chopped parsley
STEPS
Cut bacon into 5mm strips. Place on a baking sheet lined with aluminum foil and toast for about 4 minutes until crispy.
Cut onions in half vertically, remove the core, and slice thinly.
Heat butter in a pot over low heat until melted, then add onions and sauté until softened.
Add water, cover, and simmer on low heat for about 20 minutes. Blend the mixture in a blender until smooth.
Return the blended mixture to the pot, add salt, consomme, milk, and cream. Heat gently while stirring.
Serve the soup in bowls, top with crispy bacon, drizzle olive oil, and sprinkle parsley.
