INGREDIENTS
Canned Goods
- 🐟 1 can (70g) tuna in oil
Vegetables
- 🥔 2 new potatoes (300g)
- 🥑 1 avocado
Condiments
- 🧴 2 tbsp mayonnaise
- 🌰 1 tsp grain mustard
- 🍋 1 tsp lemon juice
- 🧂 Pinch of salt and pepper
STEPS
Cut the new potatoes into bite-sized pieces and soak them in water. Drain the water and place the potatoes in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 6–7 minutes until tender. Mash roughly with a fork and let cool.
Cut the avocado into halves, remove the pit, peel the skin, and dice into 1.5cm cubes.
Combine the mashed potatoes, diced avocado, canned tuna, and all condiments (mayonnaise, mustard, lemon juice, salt, and pepper) in a bowl. Mix well.
