INGREDIENTS
Main
- 🍚 1 bowl cooked rice (150g)
- 1 sheet roasted nori
- 80g ground chicken
- 🥚 1 egg
- 20g komatsuna (Japanese mustard spinach)
- 1 tbsp mayonnaise
Seasoning for Meat Soboro
- 1 tbsp mirin
- 1 tsp soy sauce
- 1/2 tsp grated ginger
Seasoning for Komatsuna Namul
- đź§‚ 1 pinch salt
- A dash grated garlic
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
STEPS
Mix ground chicken with mirin, soy sauce, and ginger in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 2 minutes. Stir to break up the meat and let cool.
Crack the egg into a microwave-safe container, add mayonnaise, and mix well. Cover loosely with plastic wrap and microwave at 600W for 1 minute. Stir until crumbly and let cool.
Cut komatsuna into bite-sized pieces using kitchen scissors and place in a microwave-safe container. Add 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 1 minute. Drain water, mix with salt, garlic, sesame oil, and sesame seeds, then let cool.
Layer the bento box starting with 1/3 of the rice, followed by 1/4 of the nori (torn into pieces), komatsuna namul, another 1/4 of the nori, egg soboro, another 1/3 of the rice, another 1/4 of the nori, meat soboro, the remaining rice, and the remaining nori.
