INGREDIENTS
Pasta
- 🍝 200g spaghetti
Seafood
- 1 piece mentaiko
Seaweed
- 2 sheets roasted nori
Vegetables
- 2 leaves shiso
Condiments
- 2 tsp sesame oil
- đź§‚ Pinch of salt
- To taste white sesame seeds
Tsukudani Sauce
- 1 tbsp mirin
- 🍬 1/2 tsp sugar
- đź§‚ 1 tbsp soy sauce
- đź’§ 2 tbsp water
STEPS
Tear the nori into small pieces and place in a microwave-safe container. Add the tsukudani sauce ingredients (mirin, sugar, soy sauce, water) and mix. Let it soak for 10 minutes, then microwave uncovered at 600W for 1 minute.
Slice the shiso leaves into thin strips. Cut open the mentaiko and extract the roe.
Boil water in a pot and cook the spaghetti according to package instructions. Reserve 50ml of pasta water before draining.
In a bowl, mix the tsukudani-style nori, mentaiko, and sesame oil. Add the cooked spaghetti and reserved pasta water, then mix well. Adjust seasoning with salt. Serve on a plate, garnish with shiso leaves, and sprinkle white sesame seeds.
