INGREDIENTS
Dry Ingredients
- 🥣 1 cup rolled oats
- 🌾 1 cup whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup brown sugar
Wet Ingredients
- 🥛 1 cup buttermilk
- 🍎 ½ cup applesauce
- 🥚 1 egg
STEPS
Place oats into a small bowl, pour in buttermilk. Let the mixture sit for two hours at room temperature.
Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper muffin liners.
In a large bowl, stir together whole wheat flour, baking powder, baking soda, and brown sugar.
Mix the oat/buttermilk mixture, applesauce, and egg into the dry ingredients. Stir well until combined and pour the batter into prepared muffin cups.
Bake in preheated oven for 30 minutes or until a toothpick inserted into the center of a muffin comes out clean.
