INGREDIENTS
Dry Ingredients
- 2 1/4 cups oat bran
- 1/4 cup brown sugar
- 1 1/2 teaspoons cinnamon
- 1 tablespoon baking powder
Wet Ingredients
- 🍌 1 banana
- 3/4 cup applesauce
- 2 tablespoons raisins, dates, or other dried fruit
- 🥚 1 large egg
- 🍊 1/2 cup orange juice
- 🥛 3/4 cup non-fat milk
- 2 tablespoons canola oil
STEPS
Wash hands with soap and water.
Preheat oven to 425°F.
Mix oat bran, brown sugar, cinnamon, and baking powder in a bowl. Set aside.
In another bowl, whisk egg, orange juice, milk, and canola oil together. Mix in banana, applesauce, and dried fruit.
Combine the liquid mixture with the dry ingredients until just moist.
Spray muffin tin with non-stick coating and pour batter into each tin.
Bake in the oven for 15 to 17 minutes.
Remove muffins from pan after cooling for 10 minutes. Let cool completely on a rack and freeze if needed.
