INGREDIENTS
Chicken and Broth
- π 4 pounds boneless, skinless chicken meat
- π₯ 2 small carrots, sliced
- π 3 sweet potatoes, peeled and cubed
- π₯ 3 Irish potatoes, cubed
- π§ 5 small onions
- π§ 5 cups water
- π§ Salt to taste
- Ground black pepper to taste
- 1 bay leaf
- πΏ 3 stalks celery tops
- 1 pinch cayenne pepper
Dumplings
- πΎ 2 cups all-purpose flour
- π§ Β½ teaspoon salt
- 1 teaspoon baking powder
- π 4 tablespoons rendered chicken fat
STEPS
Place chicken in a large pot. Add salt, pepper, cayenne, a bay leaf, and celery tops. Cover with water and cook until chicken is fully cooked. Discard bay leaf.
Add carrots, sweet potatoes, Irish potatoes, and onions. Continue cooking until vegetables are nearly tender.
Prepare dumplings by mixing flour, salt, baking powder, and chicken fat. Gradually mix in water to form a stiff dough.
Divide dough into three parts. Roll out each part and cut into square pieces.
Add one-third of the dumplings to the simmering chicken mixture. Cook for 5 minutes.
Add the second third of dumplings and cook for another 5 minutes.
Add the final third of dumplings and cook for an additional 5 minutes.
Serve hot and enjoy.
