INGREDIENTS
Dry Ingredients
- 1 pound mochiko (glutinous rice flour)
- 🧂 2 ½ cups white sugar
- 🧂 1 teaspoon baking powder
Wet Ingredients
- 🧈 ½ cup butter, melted
- 🥛 3 cups whole milk
- 🥚 5 eggs
- 1 teaspoon vanilla extract
Additions
- 🥥 1 cup sweetened, flaked coconut
STEPS
Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
In a medium bowl, whisk together the eggs, vanilla, and milk.
In a separate bowl, stir together the mochiko (rice flour), sugar, and baking powder.
Combine wet and dry ingredients. Mix well to form a batter. Add melted butter and sweetened coconut and stir to incorporate.
Pour the batter into the greased baking dish and bake for 1 hour.
Cool completely, then cut into squares to serve.
