INGREDIENTS
Salsa Ingredients
- 1 pound tomatillos
- 🧅 1/2 cup yellow onion
- 2 serrano or other chiles
- 🧄 3 cloves garlic
- 1 teaspoon vegetable oil
- 🧂 1/4 teaspoon Kosher salt
- 🍋 1 tablespoon fresh lime juice
- 1/4 cup fresh cilantro leaves
Tilapia Fillets
- 4 tilapia fillets
- 2 teaspoons vegetable oil
STEPS
Prepare the tomatillos by peeling back the husk, rinsing with warm water, and cutting into quarters.
Place the husked tomatillos, onion, chilies, garlic, and 1 teaspoon oil in the baking pan. Roast in the oven for about 20 minutes until soft and dark green.
Transfer the roasted mixture to a blender. Add salt, lime juice, and cilantro, then purée.
Heat a skillet over high heat, then add 2 teaspoons of oil.
Cook tilapia fillets in the pan for about 5 to 6 minutes until golden brown on each side.
Transfer the tilapia to a serving plate and top with salsa. Serve immediately.
