INGREDIENTS

- 🧈 1 tablespoon butter
- 1 tablespoon olive oil
- 🧅 1 small onion, finely chopped
- 2 cups arborio rice, rinsed
- 1 quart low-sodium chicken broth
- 🧀 ¾ cup grated Parmesan cheese
- 🧂 1 teaspoon coarsely ground pepper
- 🧂 Salt, to taste
STEPS
Heat butter and olive oil in a large saucepan over medium-high heat. Add onion and sauté until softened, about 3 to 4 minutes.
Add rinsed arborio rice and stir to coat with the butter and oil mixture.
Turn off the heat and optionally let stand for several hours if desired.
Add the broth, cover the saucepan, and bring to a simmer. Reduce the heat to low and let simmer, stirring occasionally, for about 12 minutes, or until the stock is absorbed and the rice is creamy yet slightly chewy in the center.
Stir in the Parmesan cheese and coarsely ground pepper. Add salt to taste. Serve hot.
