INGREDIENTS
Pasta
- 🍝 16 ounces whole wheat pasta
Oil and Seasoning
- 1 tablespoon vegetable oil
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Vegetables
- 🧅 1/2 onion, chopped
- 🧄 3 cloves garlic, chopped
- 6 cups spinach, chopped (or 1 bunch Swiss chard)
Protein
- 🍗 2 cups cooked chicken cubes (or 3 chicken sausages, chopped)
- 1 can cannellini beans, low-sodium
Liquids
- 🥣 2 cups chicken broth, low-sodium
Garnish
- 🧀 Parmesan cheese, grated (optional)
STEPS
Wash hands with soap and water.
Cook the pasta according to directions on the box, then drain.
Heat vegetable oil in a large pan over medium heat. Add onion and cook for 5 minutes.
Add chopped garlic to the pan and cook for 1 minute more.
Stir in chopped chicken and cook until heated through.
Add spinach (or chard), beans, chicken broth, and Italian seasoning. Stir to combine.
Add the cooked pasta to the pan and stir until combined. Cook for another 5 minutes.
Season with salt and pepper to taste, and optionally garnish with Parmesan cheese before serving.
