INGREDIENTS
Meringue
- 3/4 cup white sugar
- 2 teaspoons cornstarch
- 🥚 3 large egg whites
- 🧂 1 pinch salt
- 1 pinch cream of tartar
- 1 teaspoon vanilla extract
- 3/4 teaspoon white vinegar
Cranberry Sauce
- 2 cups cranberries
- 1/2 cup white sugar
- 1 pod star anise
- 🧂 1 pinch salt
- 1 cup orange juice
Whipped Cream
- 1 cup heavy cream
- 2 tablespoons confectioner's sugar
Toppings
- 1/2 cup roasted pistachios
- Powdered sugar for garnish
STEPS
Preheat oven to 250°F (120°C) and line baking sheets with parchment paper. Mix sugar and cornstarch together in a bowl.
Beat egg whites, salt, and cream of tartar until foamy. Gradually add sugar mixture and beat to stiff peaks. Mix in vanilla and vinegar.
Pipe meringue circles of decreasing size and bake for 75 minutes, rotating pans halfway. Cool meringues in the oven with the door slightly open.
Simmer cranberries, sugar, star anise, salt, and orange juice until soft and syrupy. Cool and refrigerate.
Whip heavy cream with confectioner's sugar to soft peaks and refrigerate until needed.
Assemble trees by layering meringue circles with whipped cream, cranberry sauce, and pistachios, finishing with the smallest circle at the top.
Drizzle cranberry sauce for decoration and sprinkle powdered sugar.
