INGREDIENTS
Meringue base

- ⅛ teaspoon cream of tartar
- 🧂 1 cup white sugar
- 1 tablespoon cornstarch
- 2 teaspoons distilled white vinegar
Cream topping
- 🥛 1 ¼ cups heavy cream, chilled
- 1 teaspoon vanilla extract
- 🧂 2 teaspoons confectioners' sugar
Fruit topping
- 4 passion fruits
STEPS
Preheat oven to 400°F (205°C). Grease interior of 8-inch springform pan and dust lightly with cornstarch.
Beat egg whites until stiff and glossy, ensuring no grease or yolk contamination. Combine cream of tartar, white sugar, and cornstarch; gradually beat into egg whites. Sprinkle vinegar and fold gently.
Pile meringue into prepared pan, spreading to sides and leaving a slight depression in the center. Bake at 250°F (120°C) for 75–90 minutes, then cool in an open-oven door for an additional 15 minutes.
Whip cream with vanilla extract and confectioners' sugar until thick and firm, then spread over cooled meringue.
Spoon passion fruit pulp over cream or arrange sliced kiwi in a design. Chill until ready to serve.
