INGREDIENTS
Meringue
- 🥚 4 egg whites, at room temperature
- 🧂 ¾ cup white sugar
- 🧂 ¼ cup superfine sugar
- 1 ½ teaspoons cornstarch
- ½ teaspoon orange blossom water (Optional)
- ½ teaspoon white vinegar
Lemon Curd
- 🍋 3 lemons, zested and juiced
- 🧂 ⅓ cup white sugar
- 🥚 4 large egg yolks
- 🧂 1 pinch sea salt
- 3 tablespoons coconut oil, at room temperature
Whipped Cream
- 🥛 1 cup heavy cream
- 🧂 2 tablespoons confectioners' sugar
- 1 teaspoon orange blossom water (Optional)
Fruits
- 🍊 1 pink grapefruit, peeled and sliced crosswise
- 🍊 1 orange, peeled and sliced crosswise
- 1 ripe Fuyu persimmon, peeled and thinly sliced
- ½ pomegranate, seeded
STEPS
Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper and trace three circles on it. Flip the parchment paper over.
Beat egg whites with an electric mixer until soft peaks form. Gradually add white sugar. Mix cornstarch and superfine sugar in a small bowl and gradually add it to the meringue. Beat until stiff and glossy, and fold in orange blossom water and vinegar.
Spoon meringue into the traced circles, shaping the edges higher than the center to hold the filling.
Bake meringues for about 1 hour until firm and dry. Turn off the oven and let them cool inside for an additional 1 hour.
To make lemon curd, simmer 1 inch of water in a saucepan. Whisk together lemon juice, zest, sugar, egg yolks, and salt in a glass bowl over simmering water until thickened, about 10 minutes. Remove from heat and whisk in coconut oil until combined.
Strain curd through a fine-mesh sieve, press with plastic wrap, and refrigerate.
Beat heavy cream, confectioners' sugar, and orange blossom water until soft peaks form.
Assemble the pavlova by spooning lemon curd into the meringue centers, topping with whipped cream, and garnishing with grapefruit, orange, persimmon slices, and pomegranate seeds.
