INGREDIENTS
Peach Filling
- 🍑 3 large fresh peaches - peeled, pitted, and sliced
- 💧 ½ cup water
- 🍚 ½ cup white sugar
- ½ cup brown sugar
- 🧈 4 tablespoons salted butter
- 2 tablespoons vodka (Optional)
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 teaspoon ground nutmeg
Cobbler-Style Topping
- ¾ cup brown sugar
- 🧈 ¾ cup salted butter, softened
- 🍑 3 large fresh peaches - peeled, pitted, and sliced
- 1 teaspoon ground cinnamon
Cake Batter
- 🥚 6 large eggs
- 🧈 1 cup salted butter, softened
- ¾ cup buttermilk
- ½ cup sour cream
- ½ cup butter-flavored shortening
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 🌾 3 cups all-purpose flour
- 🍚 3 cups white sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
STEPS
Preheat the oven to 350°F (175°C). Generously grease a 10-inch Bundt pan.
Combine peaches, water, white sugar, brown sugar, butter, vodka (optional), cinnamon, vanilla extract, almond extract, and nutmeg in a saucepan over medium-low heat. Cook until peaches are tender, about 20 minutes. Set aside to cool.
Mix brown sugar and butter for cobbler topping. Spread evenly in prepared cake pan. Arrange sliced peaches on top with cinnamon.
In a bowl, combine eggs, butter, buttermilk, sour cream, shortening, almond extract, and vanilla extract. Mix thoroughly.
In another bowl, combine flour, sugar, cinnamon, and baking powder. Slowly mix into butter mixture until combined.
Pour half of the batter into the prepared Bundt pan. Add the peach filling on top, then pour the remaining batter over it.
Bake at 350°F (175°C) for 45 minutes. Reduce oven to 325°F (165°C) and bake for an additional 75 minutes, or until a toothpick inserted comes out clean.
Invert the cake onto a plate and cool before serving.
