INGREDIENTS
Main
- 1 cup brown rice
- 2 cups chicken broth
- 1/3 tablespoon dehydrated onion
- π§ 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger
- π 1 sweet potato
- π 1 can tomatoes, low-sodium
- π₯ 8 tablespoons peanut butter
- π₯ 1 1/4 cups skim milk
- 3 cups baby spinach
- π₯ 1/4 cup peanuts
- π§ 1/4 cup green onion
- π§ salt to taste
- red pepper to taste
STEPS
Wash hands with soap and water.
Combine the first 9 ingredients into a soup pot. Bring to a boil, then reduce the heat to medium low, cover, and simmer for 10 minutes.
Stir in peanut butter and milk. Return to a gentle simmer and cook uncovered for 5 minutes.
Stir in spinach and cook until wilted, about 2 to 3 minutes. Remove from heat.
Ladle the stew into bowls and top with peanuts and green onion if desired.
