INGREDIENTS
Dry Ingredients
- ⅓ cup unsifted powdered sugar
- 🧂 ¼ teaspoon fine salt
- 🌾 1 ¼ cups all-purpose flour
- 🍚 ⅓ cup white sugar, or as needed
- 1 cup powdered sugar, or as needed
Wet Ingredients
- 🧈 1 stick unsalted butter, at room temperature
- 🥚 1 large egg yolk
- 1 teaspoon vanilla extract
- ⅛ teaspoon almond extract
- 🥛 1 tablespoon milk, or as needed
Toppings
- 🍓 ½ cup fruit jam, divided
STEPS
Gather all ingredients. Preheat the oven to 325°F (165°C). Line a baking sheet with a silicone mat.
Mix powdered sugar and butter in a bowl until creamy. Add egg yolk, vanilla extract, salt, and almond extract; mix well. Blend in flour until just combined.
Portion dough into 1/2-ounce balls (about 1 tablespoon). Roll in white sugar on a plate, then roll between your palms.
Place balls on a baking sheet, a few inches apart. Flatten lightly with fingers.
For round cookies: Poke a well into each ball using a finger or end of a thick wooden spoon dusted with powdered sugar. Fill wells with jam and lightly tap the baking sheet.
For flatter cookies: Press thumb into each ball to make a shallow indentation. Spoon in jam and lightly tap the baking sheet.
Bake in preheated oven for 15 minutes until light golden brown. Rest cookies on baking sheet for 5 minutes, then transfer to a wire rack to cool.
Make icing: Mix powdered sugar and milk in a small bowl to piping consistency. Drizzle over cookies in a zigzag pattern and let set for 15 minutes before serving.
