INGREDIENTS
Rice
- π 1 cup uncooked brown rice
- π§ 2 cups water
Vegetables
- π§ 1 yellow onion
- 1 bell pepper
- π§ 2 cloves garlic
Seasonings
- 2 teaspoons vegetable oil
- 1 1/2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1/4 teaspoon black pepper
- π§ 1/4 teaspoon Kosher salt
Meat
- π₯© 3/4 pound lean ground turkey or beef
Canned Items
- π 1 can 14.5 ounce low-sodium diced tomatoes
- 1 can 15.5 ounce low-sodium black beans
Other
- 1/4 cup green olives
- 1/4 cup raisins
STEPS
Cook the rice as instructed on the package with water.
Set the cooked rice aside.
Place a skillet on the stove over medium heat and add oil. Add chopped onion, bell pepper, and minced garlic. Cook and stir for about 10 minutes until the onion is softened and lightly browned.
Add oregano, cumin, pepper, and salt. Stir well.
Add ground turkey or beef in small batches. Stir well and cook for about 5 minutes until fully cooked.
Add diced tomatoes and black beans. Simmer for about 15 minutes until the mixture is well combined.
Add olives and raisins. Stir well and cook for about 2 minutes until heated through.
Serve the mixture over the cooked rice or refrigerate in an airtight container for up to 3 days.
