INGREDIENTS
Pesto
- 2 tablespoons pistachios
- 1 1/2 cups basil leaves
- 1/2 cup grated Parmesan cheese
- 1/3 cup olive oil
- 🧂 1/4 teaspoon salt (optional)
Pasta and shrimp
- 14 1/2 ounces fusilli pasta
- 🦐 1 pound shrimp
- 🧈 2 tablespoons butter
- 1 teaspoon garlic powder
- 🧂 1/2 teaspoon salt (optional)
- 1/4 teaspoon black pepper
STEPS
Toast pistachios in a skillet over medium-high heat until fragrant, tossing frequently, about 60 seconds. Let pistachios cool completely for approximately 600 seconds.
Combine pistachios, basil, Parmesan cheese, olive oil, and garlic in a blender or food processor. Blend until smooth. Season with salt and optional lemon juice.
Bring a large pot of lightly salted water to a boil. Cook fusilli pasta, stirring occasionally, until tender yet firm (10-12 minutes). Reserve 1 tablespoon of pasta water, then drain.
Mix 1/4 cup of prepared pesto with cooked pasta.
Season shrimp with garlic powder, salt, and black pepper in a bowl. Toss thoroughly.
Heat a large skillet over medium heat and melt butter. Cook shrimp in a single layer for 2-3 minutes per side until seared and fully cooked.
Add cooked shrimp to pasta. Adjust sauce thickness with reserved pasta water if needed. Serve immediately.
