INGREDIENTS
Chicken Filling
- 1 cup shredded chicken
- 🧅 1/2 cup chopped onion
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp garlic powder
Plantain Cups
- 3 plantains
- 🧂 1/2 tsp salt
- 2 tbsp olive oil
Optional Toppings
- 1/2 cup low-fat yogurt dip
STEPS
Wash hands with soap and water.
Heat oil in a skillet over medium heat. Add shredded chicken and chopped onions, cooking for 1-2 minutes.
Add paprika, black pepper, and garlic powder to chicken mixture; cook for an additional 5 minutes while stirring. Set aside.
Wash and scrub plantains. Cut off both ends, make 3 vertical cuts along the skin, peel, and slice into 1-inch chunks.
Heat oil in a skillet over medium heat for 1 minute. Add plantain chunks, sprinkle with salt, and cook for 5-6 minutes per side until golden.
Turn heat to low and remove plantain chunks from pan.
Shape 2 plantain chunks at a time into cups using hands, pestle and mortar, or a lemon squeezer.
Fill plantain cups with chicken mixture and top with yogurt dip if desired.
Serve immediately.
