- š 3 fillets horse mackerel
Vegetables
- 3 shiso leaves
Condiments
- 6 small plums

STEPS
Cut the shiso leaves in half and remove the stems. Remove the pits from the plums and mash them with a knife.
Cut the horse mackerel fillets in half lengthwise. Spread a thin layer of mashed plum on each piece and place a shiso leaf on top.
Roll the fillets tightly from one end and secure them with a toothpick.
Coat the rolls in flour, then dip them in beaten egg, and finally cover them with breadcrumbs.
Heat 2 cm of salad oil in a pot to 170°C and fry the rolls until golden brown.
