INGREDIENTS
Noodles
- 2 servings cooked udon noodles
Meat
- 100g thinly sliced pork belly
Vegetables
- 100g chopped komatsuna
- 100g shimeji mushrooms
Seasoning
- đź§‚ Pinch of salt and pepper
- 1 tbsp sake
- 1 tsp salad oil
Sauce
- 1.5 tbsp concentrated soy sauce
- 2 tbsp mayonnaise
Toppings
- 1/2 tbsp white sesame seeds
- 3g bonito flakes
STEPS
Cut the roots off the komatsuna and slice into 3cm pieces. Trim the shimeji mushrooms and separate them.
Season the pork belly with salt and pepper, then cut into 3cm pieces.
Heat salad oil in a frying pan over medium heat, add pork belly, and stir-fry until the color changes.
Wipe excess oil with a paper towel. Add komatsuna and shimeji mushrooms, stir-fry until coated with oil. Add cooked udon noodles and sake, cover with a lid, and steam for 1 minute.
Remove the lid, stir-fry for another minute, then add soy sauce and mayonnaise. Mix quickly and evenly.
Serve on a plate, sprinkle bonito flakes and white sesame seeds on top.
