Lay out pork slices on a sheet of plastic wrap. Sprinkle with salt and pepper, then dust with potato starch. Cover with another sheet of plastic wrap and press to flatten the meat.

Wash the potato and wrap it in plastic wrap while still wet. Microwave at 600W for 4 minutes. Peel the potato while warm using a kitchen paper towel, then mash it in a bowl. Season with salt and pepper and let cool slightly.

Place half of the mashed potato in the center of the pork. Fold a slice of cheese and place it on top, then cover with the remaining mashed potato, shaping it to enclose the cheese.

Lift the pork using the plastic wrap and fold it around the potato mixture, shaping it into a round patty. Heat salad oil in a frying pan and place the patty seam-side down.

Cook over medium heat until browned, then flip and cover with a lid. Steam for 3 minutes. Remove the lid and cook until evenly browned and fully cooked, turning occasionally. Remove the patty from the pan.

Add the sauce ingredients (ketchup, tonkatsu sauce, sake) to the pan and simmer over low heat until thickened. Serve the patty with the sauce poured over.
