INGREDIENTS
Meat
- 400g pork belly block
Vegetables
- 360g daikon radish
- 250g konjac
Processed Foods
- 200g thick fried tofu
Seasonings
- 1000cc bonito dashi stock
- 2 tbsp mirin
- 2 tbsp soy sauce
- đź§‚ 1/3 tsp salt
STEPS
Cut daikon into 8 pieces, peel thickly, and score one side with a deep cross cut.
Boil daikon in water until 60% cooked, about 10 minutes, then drain.
Cut thick fried tofu and konjac into triangles. Score konjac and rub with salt, letting it sit for 5 minutes.
Boil konjac in water for 3 minutes, then drain.
Cut pork belly into 2cm wide pieces.
Boil pork belly in water for 2 minutes, then drain.
In a pot, combine dashi, mirin, soy sauce, salt, pork belly, tofu, konjac, and daikon. Simmer covered on low heat for 30 minutes.
