    • ½ cup lard
    • 🥚 1 egg, beaten
    • 🥛 ½ cup milk
  • Additional

    • 1 cup chipotle salsa

Place pork in a large pot and cover with water. Add onion, garlic, salt, oregano, cumin, and bay leaves. Bring to a boil, reduce heat and simmer for 1 1/2 hours.

Sift together flour, masa harina, baking powder, and salt. Add shortening to dry ingredients and mix. Beat together egg and 1/2 cup milk. Combine these into a dough, divide into 16 pieces, roll each into a ball, and refrigerate.

Preheat oven to 375°F (190°C).

After simmering, remove cooked pork from liquid and bake in a baking dish for 1 hour. Shred the pork and mix with chipotle salsa.

Flatten each dough ball on a floured surface to make a 5-inch circle. Place 2-3 tablespoons of filling in the center, brush edges with milk, fold over, and crimp with a fork to seal.

Lightly grease a baking sheet. Place formed empanadas on the sheet and bake for 20 minutes until golden brown.
