INGREDIENTS
Meat
- 120g pork slices
Vegetables
- 2cm (100g) daikon, sliced
- 🥕 1/3 carrot (70g), sliced
- 2 shiitake mushrooms, sliced
Liquid
- đź’§ 600cc water
Seasoning
- 1 tsp Japanese dashi granules
- 100g sake lees
- 2 tsp light soy sauce
- 6 tbsp white miso
Garnish
- đź§… Chopped green onion, to taste
STEPS
Cut pork into bite-sized pieces. Peel and slice daikon and carrot into thin strips. Slice shiitake mushrooms after removing the stems.
In a pot, bring water and dashi granules to a boil. Add the prepared ingredients, cover, and simmer on low heat for about 5 minutes until vegetables are tender. Reserve one ladle of broth.
In a heatproof bowl, mix sake lees with the reserved broth until dissolved. Add the remaining seasonings (soy sauce and white miso) and mix well.
Add the mixture back into the pot and stir well. Simmer briefly. Serve in bowls and garnish with chopped green onion.
