- 1 (3 pound) boneless pork shoulder roast, trimmed and cut into 1-inch cubes
Vegetables

- 2 cups chopped fresh tomatillos
- 1 (7 ounce) can diced green chiles, drained
- ½ cup chopped fresh cilantro
- 6 sprigs cilantro, for garnish
- 🧄 3 cloves garlic, minced

- 2 teaspoons dried marjoram

- 💧 1 cup water
- 2 tablespoons olive oil, or more if needed

STEPS
Combine flour, pepper, 1 teaspoon salt, and cumin in a large bowl. Dredge pork in flour mixture until well coated.
Heat olive oil in a large, heavy pan or Dutch oven over medium-high heat until it shimmers. Add pork in batches in a single layer, browning on all sides for approximately 15 minutes. Transfer pork to a bowl and cover to keep warm.
Add chopped onion to the pan and stir over medium heat. Add more olive oil if necessary. Cook until translucent and starting to brown, about 7 minutes.
Return pork to the pan; stir in tomatillos, water, canned chiles, 1/2 cup chopped cilantro, garlic, and marjoram. Check seasoning and add a pinch of salt if needed. Cover and simmer over low heat, stirring occasionally, for about 1 hour or until pork is tender.
Degrease stew before serving. Serve in bowls and garnish with sour cream and cilantro sprigs.
