INGREDIENTS
Vegetables
- 🥔 300g potatoes, peeled and sliced
- 🧅 50g onion, thinly sliced
Seasoning
- 1/2 tsp consomme powder
- 🧂 1/3 tsp salt
- A pinch of pepper
- A pinch of chopped parsley
Dairy
- 🧈 20g salted butter
- 🥛 200cc milk
Liquid
- 💧 300cc water
STEPS
Peel and slice the potatoes into 5mm slices. Soak in water briefly and drain. Thinly slice the onion.
Heat butter in a pot over medium heat. Add onions and sauté until softened. Add potatoes and stir until coated with butter.
Add water and consomme powder. Bring to a boil, cover, and simmer on low heat for 10 minutes until potatoes are tender. Let cool slightly.
Blend the mixture in a blender until smooth. Return to the pot, add milk, salt, and pepper, and heat gently.
Serve in bowls and garnish with chopped parsley.
