INGREDIENTS
Canned Goods
- 🐟 1 can tuna in oil
Vegetables
- 🧅 1/2 fresh onion
- 🥔 2 potatoes (300g)
- 🥒 1/2 cucumber
Seasoning
- 🧂 1/3 tsp salt
Condiments
- 🥫 2 tbsp mayonnaise
- 🍶 1 tbsp vinegar
- 🧂 1/2 tbsp concentrated soy sauce
- 🧂 Pinch of salt and pepper
STEPS
Thinly slice the fresh onion and cucumber. Place them in a bowl, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess water.
Cut the potatoes into bite-sized pieces and soak them in water briefly. Drain and place in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 5 minutes.
Mash the potatoes and mix in vinegar, salt, and pepper. Allow to cool slightly.
Combine the mashed potatoes with the onion-cucumber mixture, canned tuna, mayonnaise, and soy sauce. Mix well.
