INGREDIENTS
Beef and Meat
- 1 (8 pound) standing rib roast, fat trimmed
- 6 slices bacon
Seasonings and Spices
- 2 tablespoons freshly ground black pepper
- 1 teaspoon crushed dried rosemary
Baking Ingredients
- 3 ¼ cups rock salt
- 3 ¼ cups all-purpose flour
- ¾ cup cold water
Vegetables and Mushrooms
- 1 pound fresh mushrooms, chopped
Gravy Mix and Liquids
- 2 (1 ounce) packets dry au jus gravy mix
- 6 cups cold water
- ½ cup dry red wine
Other

STEPS
Preheat oven to 450 degrees F (230 degrees C). Rinse the roast, pat dry, and season with black pepper and rosemary.
Prepare the rock salt paste by mixing rock salt, flour, and cold water. Coat the roasting pan with a layer of paste, place the meat ribs down, and cover with bacon and the paste.
Bake in the preheated oven until seared and brown, about 20-30 minutes. Lower temperature to 325 degrees F (165 degrees C) and continue cooking for medium-rare temperature (130 degrees F / 54 degrees C) for another hour. Let the roast rest for 30 minutes.
Prepare mushroom gravy by melting butter, cooking mushrooms until browned, then stirring in cold water, au jus gravy mix, and wine. Simmer until thickened.
Break off salt crust, slice meat, and serve with mushroom gravy.
