INGREDIENTS
Vegetable
- 🎃 300g pumpkin, peeled and seeded
Dairy
- 🧀 80g pizza cheese
- 🥛 3 tbsp milk
Seasoning
- 🧂 Pinch of salt and pepper
Oil
- Enough salad oil for frying
Breading
- Enough all-purpose flour
- 🥚 1 beaten egg
- Enough breadcrumbs
STEPS
Remove seeds and pulp from the pumpkin, cut into bite-sized pieces, and peel the skin. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for about 8 minutes until soft.
Divide the pizza cheese into 6 portions and shape them into small balls.
Mash the cooked pumpkin while hot, mix in milk and salt and pepper, and divide into 6 portions. Wrap each portion around a cheese ball and shape into a round croquette.
Coat each croquette in all-purpose flour, then beaten egg, and finally breadcrumbs.
Heat salad oil in a pot to 170°C and fry the croquettes, turning occasionally, until golden brown.
