INGREDIENTS
Pie Crust
- 1 (15 ounce) package refrigerated pie crusts
Filling
- 🧀 4 cups shredded Cheddar cheese
- 1 (12 ounce) package frozen chopped spinach, thawed and drained
- 🧅 1 cup finely chopped onion
- 🥚 12 large eggs
- 🥛 2 cups milk
STEPS
Preheat the oven to 400°F (200°C). Line two 9-inch pie plates with refrigerated pie crusts. Cover crusts with aluminum foil and a layer of pie weights or dried beans.
Bake the pie crusts for 10 minutes or until the edges are golden. Remove foil and weights carefully, then bake for an additional 5 minutes to set the crust. Let crusts cool slightly and reduce oven temperature to 350°F (175°C).
Sprinkle shredded cheddar cheese, thawed and drained spinach, and chopped onion evenly over the pie crusts.
In a bowl, whisk together the eggs, milk, salt, and pepper. Divide this mixture evenly between the two crusts.
Bake the quiches in the oven at 350°F (175°C) for 45 minutes or until the top is golden brown and the filling is firm in the center. Allow to cool slightly before serving.
