INGREDIENTS

STEPS
Bring the milk to a boil in a heavy-bottomed pan till it starts foaming; immediately add the lime juice and stir. It will curdle right away. Separate the milk solids (chenna) from the whey using a colander lined with cheesecloth. Rinse with cold water and drain completely.
Gather the cheesecloth edges and squeeze out the water to form soft paneer. Knead paneer into a smooth paste and divide into 20 equal portions.
Bring the water to a boil in a pressure cooker and dissolve the sugar into the water.
Roll each paneer portion into a smooth ball, ensuring no cracks, and gently drop into the hot syrup. Pressure cook for 6 minutes on medium-low heat.
Release pressure from the cooker under cold running water and remove the lid. Ensure the rasgullas are floating, having expanded 2-3 times in size. Stir cardamom into the syrup and refrigerate to cool completely before serving.
