Flavorings

Others

STEPS
Whisk together white sugar, cornstarch, and salt in a small saucepan. Stir in 1 cup of the raspberries and cook over medium-low heat, stirring occasionally and mashing raspberries until the sauce thickens, about 4 minutes. Remove and cool for 10 minutes.
Beat cream cheese, 1/4 cup powdered sugar, 1 tablespoon heavy cream, orange zest, cardamom, and almond extract with a mixer until smooth. Chill until ready to use.
Roll 1 sheet of puff pastry into a 12x9-inch rectangle on floured parchment paper. Cut diagonal strips on each side, leaving the center 3 inches uncut. Spread 1/2 cup cream cheese filling in the center and top with 3 tablespoons of the raspberry mixture.
Sprinkle with 1/2 cup raspberries. Fold the pastry strips over the filling to create a braid. Repeat with the remaining puff pastry and filling.
Brush pastries with egg wash. Transfer to baking sheets and freeze for 1 hour.
Preheat the oven to 400Β°F (200Β°C). Bake pastries for 30 to 35 minutes, rotating sheets halfway through. Cool on baking sheets for 30 minutes.
Whisk together remaining 5 tablespoons cream and 3/4 cup powdered sugar. Drizzle over cooled pastries and sprinkle with almonds.
