INGREDIENTS

- 🥚 3 large egg yolks
- 🥛 1 1/2 cups cream, divided

- 🍯 1/2 cup sugar
- 2 drops vanilla extract

STEPS
Whisk egg yolks briefly in a small bowl.
Heat 3/4 cup cream and sugar in a pot over medium heat until sugar dissolves and cream is hot. Whisk a little of this hot mixture into egg yolks to temper. Add the tempered egg yolks to the remaining hot cream in pot and stir constantly until thickened. Strain into a bowl.
Add remaining cream to the mixture, cover, and chill in the refrigerator.
Puree raspberries in a food processor and pass through a fine sieve to remove seeds. Mix in sugar, vanilla extract, and salt, then chill in the refrigerator again.
Pour the mixture into an ice cream maker and freeze following manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze for 4 hours until firm.
