INGREDIENTS
Meat
- 1 ¼ pounds pork loin
Vegetables
- 🧅 1 large onion, halved
- 🧄 1 clove garlic
- 4 dried chile peppers
Seasoning
- 🧂 1 ½ teaspoons salt

- 1 (10.5 ounce) can beef broth
Dry Goods
- 1 (8 ounce) package dried corn husks
- 2 cups masa harina
- 1 teaspoon baking powder
- ⅔ cup lard

- 1 cup sour cream
STEPS
Place pork, onion, and garlic in a Dutch oven. Add enough water to cover and bring to a boil. Reduce heat and simmer until pork is cooked through, about 2 hours.
Remove stems and seeds from chile peppers. Simmer chiles in 2 cups water for 20 minutes, then blend and strain to make chile sauce.
Shred cooked pork and mix with 1 cup chile sauce. Set aside remaining sauce.
Soak corn husks in warm water for 30 minutes to soften.
Beat lard with broth until fluffy. Combine masa harina, baking powder, and salt; stir into lard mixture, adding broth as needed to make dough.
Spread dough onto corn husks to ¼- to ½-inch thickness. Add 1 tablespoon pork mixture to each husk. Fold husks to enclose filling.
Arrange tamales in a steamer basket and steam for 1 hour.
Remove tamales from husks, drizzle with reserved chile sauce, and serve with sour cream.
