INGREDIENTS
Cupcake base
- 🍓 8 large fresh strawberries
- 🥚 2 eggs
- 🍚 1 cup white sugar
- ⅓ cup vegetable oil
- ½ teaspoon vanilla extract
- 🍋 ½ teaspoon lemon zest
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 🧂 ¼ teaspoon salt
- 3 tablespoons instant vanilla pudding mix (Optional)
- 1 drop red food coloring (Optional)
Frosting
- ¾ cup cream cheese, softened
- 🧈 2 tablespoons butter, softened
- ½ cup confectioners' sugar
- ½ teaspoon vanilla extract
- 🍓 3 large fresh strawberries, sliced
STEPS
Preheat oven to 325°F (165°C). Spray cupcake cups with cooking spray or line with cupcake liners.
Blend 8 strawberries into a puree, strain to remove seeds, and measure out ¾ cup puree.
In a bowl, beat eggs, sugar, oil, vanilla extract, lemon zest, and strawberry puree. Mix in flour, baking powder, salt, vanilla pudding mix (optional), and red food coloring (optional). Spoon batter into prepared cupcake cups, filling each 2/3 full.
Bake cupcakes for 23 minutes or until a toothpick inserted comes out clean. Cool for at least 10 minutes.
Prepare frosting: Beat cream cheese and butter until smooth, then mix in confectioners' sugar and vanilla extract. Top cooled cupcakes with frosting and garnish with strawberry slices.
