INGREDIENTS
Tortillas
- 4 8-inch whole wheat tortillas
Vegetables
- 1 cup frozen spinach
- 🥑 1 avocado
Cheese
- 🧀 1/2 cup shredded Monterey Jack or Cheddar cheese
Beans
- 1 can 15.5 ounce low-sodium red kidney beans
Seasonings
- Garlic powder or dry herbs
STEPS
Mash beans in a bowl using a fork until slightly chunky. Add garlic powder and/or dry herbs to taste.
Place 1 tortilla on a plate and spread half the mashed beans over it.
Top the beans with 1/2 cup spinach, then half the shredded cheese.
Add half the sliced avocado on top of the cheese (optional).
Place another tortilla on top, gently press it down to stick. Repeat steps for the remaining tortillas to make the second quesadilla.
Heat a nonstick skillet over medium heat. Cook each quesadilla until golden brown, approximately 1 to 2 minutes per side. Alternatively, microwave each quesadilla until the cheese melts, about 45 seconds.
Cut each quesadilla into quarters and serve warm.
