INGREDIENTS
Fruits
- 🍓 1 quart strawberries, sliced
- 1 pint fresh blueberries
Sweeteners
- ¼ cup white sugar
- 3 tablespoons white sugar
Dairy
- 1 (8 ounce) package cream cheese, softened
Other
- 1 (7 ounce) container marshmallow creme
- 2 ⅓ cups baking mix (such as Bisquick)
- 🥛 ½ cup milk
- 🧈 3 tablespoons melted butter
STEPS
Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch square baking dish.
Mix together strawberries, blueberries, and 1/4 cup sugar in a medium bowl until evenly coated; set aside.
Mix together cream cheese and marshmallow creme in a second bowl until smooth; set aside.
Mix together baking mix, milk, 3 tablespoons sugar, and melted butter in a third bowl until smooth; pour into the prepared baking dish.
Bake in the preheated oven until lightly golden brown on top, 12 to 15 minutes. Allow shortcake to cool in the dish.
Spread berry mixture and juice over cooled shortcake, saving a few pretty berries aside for garnish. Press down gently on the berries with a spatula to allow juices to soak into cake. Spread cream cheese mixture over fruit and garnish with reserved berries.
Chill in the refrigerator for at least 30 minutes before cutting into squares.

💡 For a stronger berry flavor, consider macerating the berries in the sugar for an additional 15 minutes.Use cold cream cheese for a firmer topping consistency. For added texture, try sprinkling crushed nuts or graham cracker crumbs on top before serving.
