INGREDIENTS
Topping
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 🧈 4 tablespoons margarine or butter
Fruit Base
- 3 cups chopped fresh rhubarb
- 1 cup fresh or frozen blueberries
Sauce
- 1 tablespoon cornstarch
- 1/2 cup sugar
- 1/2 cup 100% fruit juice (apple, orange, or cranberry blend)
- 1 teaspoon vanilla extract
STEPS
Preheat oven to 350°F.
In a medium bowl, stir together brown sugar, flour, and oats. Mix in the margarine or butter and set aside.
Spread the rhubarb and blueberries in an 8x8 inch baking dish and set aside.
In a medium saucepan, mix cornstarch and sugar. Stir in the juice and cook over medium heat, stirring constantly, until the mixture thickens. Turn off the heat.
Stir in vanilla extract and pour the mixture over the rhubarb and blueberries.
Crumble the oat mixture on top of the fruit.
Bake for 45 minutes or until the topping is browned and the fruit is bubbling at the edges.
Serve warm or cold as desired.
