INGREDIENTS
Rhubarb Mixture
- 3 cups diced rhubarb
- 🍚 1 ¼ cups white sugar
- 2 tablespoons all-purpose flour
- 🥚 1 large egg
- 🧂 ½ teaspoon ground cinnamon
Crumble Topping
- 1 ½ cups all-purpose flour
- 🍶 1 cup packed light brown sugar
- 🥣 1 cup quick-cooking oats
- 🧂 ½ teaspoon ground cinnamon
- 🧈 1 cup butter
STEPS
Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
Combine diced rhubarb, white sugar, 2 tablespoons flour, egg, and ½ teaspoon ground cinnamon in a large bowl until evenly coated.
Spread rhubarb mixture into the prepared baking dish.
Mix 1 ½ cups flour, brown sugar, oats, and ½ teaspoon cinnamon in a separate bowl. Cut in butter using a pastry cutter or two forks until the mixture is crumbly.
Sprinkle the crumble topping over the rhubarb layer.
Bake in the preheated oven until hot and bubbly, about 40 minutes.
