INGREDIENTS
Crust
- 🍚 2 cups rice
- 🧀 16 ounces mozzarella cheese, part skim
- 🥚 1 egg
- 🧂 1/4 teaspoon salt
Topping
- 🍅 2 cups tomato purée, low-sodium
STEPS
Wash hands with soap and water.
Heat oven to 350°F and grease a 12-inch pizza pan or baking sheet.
Cook rice following directions on the package; set aside.
Grate mozzarella cheese and set aside.
Crack egg into a mixing bowl and stir to blend. Add 2 cups cooked rice, 1 cup grated cheese, and salt. Mix well to combine.
Spread the rice mixture onto the prepared pan, pressing firmly to create a crust with a slightly raised edge.
Spread tomato purée evenly over the rice crust.
Bake the pizza crust in the oven for 25 minutes.
Remove the pan from the oven, sprinkle with the remaining cheese, and bake for an additional 5 minutes until the cheese melts.
Remove pizza from the oven and cut into 12 slices.
