INGREDIENTS
Pico de Gallo
- 🍅 Tomatoes, diced
- 🧅 Onion, diced
- Jalapeño peppers, finely chopped
- Fresh cilantro, chopped
- 🍋 Lime juice, freshly squeezed
- 🧂 Salt and pepper, to taste
Seasoning Mix
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 🧂 Salt, to taste
- Pepper, to taste
Pork
- 1 pork tenderloin (about 1-1.5 lbs)
- 2 tbsp vegetable oil
Taco Assembly
- 🌮 12 corn or flour tortillas
STEPS
Wash hands with soap and water.
Prepare the pico de gallo: In a bowl, combine diced tomatoes, onions, jalapeño, cilantro, lime juice, salt, and pepper. Mix well and set aside.
Make the seasoning mix: In a small bowl, mix paprika, onion powder, garlic powder, salt, and pepper.
Remove the silver skin from the pork tenderloin, rub it with oil, and coat evenly with the seasoning mix.
Preheat grill to medium/high heat (400°F). Place the pork tenderloin over indirect heat and grill for about 6 minutes on each side, for a total of 18 minutes.
Check internal temperature of pork with a thermometer. It should read 145°F. Allow pork to rest for 3 minutes, then chop into small pieces.
Heat tortillas, assemble tacos with chopped pork and pico de gallo, then serve.
