INGREDIENTS
Vegetable
- 🎃 1/8 pumpkin
- 🧅 1/4 onion
Oil
- 1 tbsp olive oil
Marinade
- 1 tbsp vinegar
- 1 1/2 tbsp olive oil
- 🧂 1/3 tsp salt
- to taste black pepper
STEPS
Remove seeds and pulp from the pumpkin and slice it into 5mm thin pieces. Slice the onion thinly and soak it in water, then drain.
Place the pumpkin slices on a baking tray lined with aluminum foil, brush with olive oil, and roast in a toaster for 8–10 minutes until cooked.
Mix the marinade ingredients (vinegar, olive oil, salt, and pepper) in a bowl.
Add the roasted pumpkin and onion to the marinade, mix well, and refrigerate for 30 minutes to let the flavors blend.
