INGREDIENTS
Produce
- 2 cups rhubarb
- 1/3 cup green onions
Dairy
- 2 tablespoons unsalted butter
Condiments
- 1/4 cup rice vinegar
- 4 teaspoons honey
Seasonings
- 🧂 1 1/2 teaspoons salt
- 1 pinch cayenne pepper
Protein
- 4 (8 ounce) salmon filets
Oils
- 2 teaspoons vegetable oil
STEPS
Combine rhubarb, light green and white parts of green onion, butter, rice vinegar, honey, 1/2 teaspoon salt, and cayenne in a saucepan. Bring to a simmer over medium-high heat and cook, stirring occasionally, until mixture becomes a chunky sauce, 3 to 4 minutes.
Preheat the oven to 450 degrees F (230 degrees C).
Oil a baking dish large enough to fit salmon pieces, spaced 1 or 2 inches apart. Place salmon fillets in the dish and season generously with remaining 1 teaspoon kosher salt.
Spoon rhubarb mixture over the top of each piece of salmon, covering the surface. Spoon any remaining sauce in between salmon fillets.
Roast in the preheated oven until an instant-read thermometer inserted into the thickest part of salmon reaches 125 to 130 degrees F (50 to 54 degrees C). This typically takes 15 to 20 minutes.
Garnish with thinly sliced green onion tops and serve immediately.

💡 Use fresh rhubarb for the best flavor.Ensure the salmon is thick-cut for even cooking.Don’t overcook the salmon – stop roasting as soon as the internal temperature reaches 130°F (54°C) for a tender and moist texture.Serve alongside steamed vegetables or rice for a complete meal.
