INGREDIENTS
Vegetables
- 🍅 1 pound fresh tomatillos, husks removed
- 3 fresh jalapeno peppers
- 1 bunch fresh cilantro
Spices and Seasoning
- 🧂 Salt, to taste
- 🧂 Pepper, to taste
Liquids
- 💧 ½ cup water, or as needed
Aromatics
- 🧄 1 head garlic cloves, separated and peeled
STEPS
Preheat the oven's broiler. Arrange the whole cloves of garlic, tomatillos, and jalapenos on a baking sheet.
Place under the broiler and cook for a few minutes, removing the garlic cloves first as soon as they are toasted to avoid bitterness.
Continue roasting the tomatillos and jalapenos until evenly charred, turning occasionally. Set aside to cool, keeping the charred parts for flavor.
Blend the tomatillos, peppers, garlic, and cilantro in a blender. Add water as needed to facilitate blending.
Season with salt and pepper to taste and refrigerate until serving.
