  • cooking oil spray, as needed
  • 6 medium tomatoes
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon black pepper
  • 1 tablespoon dried parsley
  • 1 tablespoon garlic, minced
  • 2 tablespoons Parmesan cheese
