INGREDIENTS
Vegetables
- 1 head romanesco
- 🧅 1/2 onion, sliced
Meat
- 🥓 5 slices bacon
Pastry
- 1 frozen pastry sheet (20cm x 20cm)
Cheese
- 🧀 50g pizza cheese
- 🧀 2 tbsp grated parmesan cheese
Dairy
- 🧈 20g salted butter
- 🥛 100ml heavy cream
Egg Mixture
- 🥚 2 eggs
- 🧂 1/4 tsp salt
- Pinch of pepper
STEPS
Separate romanesco into small florets. Slice the onion thinly. Cut bacon into 1cm strips.
Mix eggs, heavy cream, parmesan cheese, salt, and pepper in a bowl.
Heat butter in a frying pan and sauté the onion over medium heat until softened. Let it cool.
Roll out the frozen pastry sheet slightly larger than the baking dish. Line the dish with the pastry, trim excess, and press onto the sides. Poke holes in the base with a fork.
Layer sautéed onion and bacon in the pastry. Pour egg mixture over them. Arrange romanesco florets upright and sprinkle pizza cheese on top. Bake at 200°C for 20–25 minutes.
