INGREDIENTS
Meat
- 1 pound pork tenderloin
- 4 sausages
Dressing and Sauces
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 teaspoon prepared horseradish
- 1 teaspoon Worcestershire sauce
- 2 teaspoons peppercorns
- 1 tablespoon olive oil
- 2 tablespoons apple cider vinegar
- 1/4 teaspoon red pepper flakes
Vegetables
- 1 (12 ounce) coleslaw mix
- 2 tablespoons fresh cilantro
- 1 tablespoon jalapeño pepper
Spices
- 1/2 teaspoon black pepper
- 🧂 1/2 teaspoon kosher salt
Bread
- 4 pita or naan bread
STEPS
Preheat the oven to 400°F (200°C).
Prepare pork by rubbing olive oil, grated garlic, red pepper flakes, cayenne, and cumin onto the tenderloin. Season generously with kosher salt.
Sear pork tenderloin in a cast-iron skillet over medium-high heat for about 5 minutes on one side, then flip and cook for another 3 minutes.
Transfer skillet to the preheated oven and roast pork tenderloin for 5 minutes. Add sausages and roast for an additional 10 minutes, flipping halfway through. Remove and let rest for 10 minutes.
Prepare slaw by combining coleslaw mix, cilantro, apple cider vinegar, jalapeño, lime juice, black pepper, and salt.
Mix peppercorn sauce by combining mayonnaise, Greek yogurt, horseradish, Worcestershire sauce, black pepper, and kosher salt.
Warm pita or naan bread in residual heat from the oven.
Slice pork tenderloin thinly (1/4-inch thick) and split sausages lengthwise.
Assemble wraps: place 4-5 slices of pork tenderloin, one sausage, a cup of slaw, and drizzle 2 tablespoons of peppercorn sauce over. Roll up and serve.
