INGREDIENTS
Sauce
- 💧 4 cups water
- 2 tablespoons olive oil
- 1/4 teaspoon oregano
Main Ingredients
- 2 1/4 cups oil, divided
- 🥚 4 large eggs
- 1/4 cup Mexican crema
- 1/2 cup cotija cheese
- 1/4 cup cilantro leaves
STEPS
Pour boiling water over peppers to soften for salsa roja. Let sit 15-30 minutes.
Heat 2 tablespoons olive oil in skillet. Sear tomatoes, onions, garlic until charred (about 2 minutes).
Blend softened peppers, charred vegetables, and 1 cup chile soaking water. Strain sauce into pan.
Simmer sauce over medium heat with reserved 3 cups chile water, bouillon, lime juice, and seasonings until reduced.
Heat oil to 350°F in large pan. Fry tortilla chips until golden (~2 minutes per batch).
Cook egg in a small nonstick pan until opaque (about 1-2 minutes).
Combine chips with salsa roja. Plate chips and top with crema, cotija cheese, egg, avocado, cilantro, lime juice, and more salsa roja.
